Skaneateles Fields Resort & Spa is home to Fields, a seasonally inspired, all-day restaurant. In partnership with Tap Root Fields—a farm dedicated to regenerative practices—we incorporate nutrient-rich produce, fresh herbs, and vibrant flowers into our dishes, cocktails, and pantry offerings.
Breakfast highlights include fresh favorites like Greek Yogurt Parfait, Farms Breakfast, Fields Egg Sandwich – all featuring goods from local farms – and pastries baked in house like Herb & Cheddar Biscuits and Blueberry Scones.
Lunch highlights include fresh savory dishes like a Chicory Salad, Grilled Shrimp Bowl, and Hot Fried Chicken and Focaccia Sandwiches with rotating seasonal ingredients.
Dinner highlights include shareable plates like Warm Olives and La Salumina Charcuterie, plus feature entrees including Charred Cabbage, Crusted Tuna, Grilled Ribeye, Roasted Chicken, and our signature Fields Burger.
Chef Esperanza leads the culinary program at Fields restaurant and its outposts, showcasing the Finger Lakes’ agricultural richness with ingredients from Tap Root Fields farm. Recognized for her creativity and focus on sustainability, she brings experience from celebrated restaurants including RPM Italian and Ramen-San in Chicago, Otra Vez in New Orleans, and Bondo at The ‘Quin House in Boston. Her menus reflect a belief that food has the power to connect people and capture a true sense of place—an experience guests can savor with every visit to Fields.
