Chef Esperanza leads the culinary program at Fields restaurant and its outposts, showcasing the Finger Lakes’ agricultural richness with ingredients from Tap Root Fields farm. Recognized for her creativity and focus on sustainability, she brings experience from celebrated restaurants including RPM Italian and Ramen-San in Chicago, Otra Vez in New Orleans, and Bondo at The ‘Quin House in Boston. Her menus reflect a belief that food has the power to connect people and capture a true sense of place—an experience guests can savor with every visit to Fields.
Fresh food begins with exceptional partners. Our team works hand in hand with local growers and artisans whose ingredients shape and inspire our menus. From vegetables grown using regenerative practices to mushrooms grown and foraged locally, the producers we work with bring the rich abundance of the Finger Lakes directly to kitchen, enabling us to serve dishes that honor both seasonality and place. The cocktail program at Skaneateles Fields — spanning what you can find at our Fields restaurant, Lobby Bar, and the Pool Bar — is overseen by William Elliott, the Executive Bar Director and Managing Partner of critically acclaimed Maison Premiere (James Beard Award Winner and #33 on North America’s 50 Best Bars) and Tigre (one of Esquire’s Best New Bars in America, 2024).
